Instructions

Step 1: Prep the Chicken and Stuffing

  1. Boil 4 large chicken breasts (or a whole chicken) in water until cooked through. Debone and cut up the chicken, making sure to save some of the chicken broth.
  2. In a mixing bowl, melt 1 stick oleo and mix it thoroughly with 1 pkg. Pepperidge Farm Herb Stuffing Mix to create the stuffing crumbs.

Step 2: Layer and Bake

  1. In a greased casserole dish, begin layering: start with a layer of the stuffing crumbs, followed by a layer of the cut-up chicken.
  2. Mix 1 can cream of chicken soup diluted with 1 can milk, and pour this mixture evenly over the chicken layer.
  3. Add another layer of stuffing crumbs, followed by another layer of chicken.
  4. Mix 1 can cream of mushroom soup diluted with 1 can chicken broth, and pour this over the second chicken layer.
  5. Top the casserole with the remaining stuffing crumbs.
  6. Bake at 350°F for 45 minutes or until bubbly hot and golden brown on top. Serve warm with cranberry sauce.

💡 Make-Ahead & Storage: This casserole can be assembled up to 24 hours in advance, covered, and stored in the refrigerator. Add 5 to 10 minutes to the baking time if cooking straight from the fridge.
