Instructions
Step 1: Prep the Chicken and Pasta
- Cook the 6 lb. hen in plenty of water in a large stockpot until tender and cooked through. Remove the hen from the pot, let it cool, then chop the chicken meat, discarding the bones and skin.
- Save the chicken broth in the pot and use it to cook the 2 packages long spaghetti until al dente. Drain and set aside.
Step 2: Sauté the Aromatics
- While the spaghetti cooks, melt 3-4 tbsp. butter in a large skillet over medium heat.
- Sauté 1 1/2 cups chopped celery and 2 large green peppers (cut into long slivers) until softened and fragrant.
- Stir in 1 can mushrooms and cook for an additional 2 minutes.
Step 3: Combine and Assemble
- To the skillet, add 1 can chopped pimiento, 1 can mushroom soup (diluted with milk), and 1 can mushroom soup (undiluted). Season with salt and pepper to taste.
- Stir in the chopped chicken, cooked spaghetti, and 1 1/2 cups grated American cheese, saving a handful of the cheese to sprinkle on top.
Step 4: Bake
- Transfer the mixture to a greased baking dish. Sprinkle the reserved grated American cheese evenly over the top.
- Bake at 350-375°F for 30 minutes until the casserole is hot, bubbly, and the cheese on top is melted and golden brown.
💡 Make-Ahead & Storage: This casserole can be assembled, covered, and refrigerated up to 24 hours before baking. Add 5-10 minutes to the baking time if cooking straight from the refrigerator.
