Instructions

Step 1: Prep the Chicken and Pasta

  1. Cook the 6 lb. hen in plenty of water in a large stockpot until tender and cooked through. Remove the hen from the pot, let it cool, then chop the chicken meat, discarding the bones and skin.
  2. Save the chicken broth in the pot and use it to cook the 2 packages long spaghetti until al dente. Drain and set aside.

Step 2: Sauté the Aromatics

  1. While the spaghetti cooks, melt 3-4 tbsp. butter in a large skillet over medium heat.
  2. Sauté 1 1/2 cups chopped celery and 2 large green peppers (cut into long slivers) until softened and fragrant.
  3. Stir in 1 can mushrooms and cook for an additional 2 minutes.

Step 3: Combine and Assemble

  1. To the skillet, add 1 can chopped pimiento, 1 can mushroom soup (diluted with milk), and 1 can mushroom soup (undiluted). Season with salt and pepper to taste.
  2. Stir in the chopped chicken, cooked spaghetti, and 1 1/2 cups grated American cheese, saving a handful of the cheese to sprinkle on top.

Step 4: Bake

  1. Transfer the mixture to a greased baking dish. Sprinkle the reserved grated American cheese evenly over the top.
  2. Bake at 350-375°F for 30 minutes until the casserole is hot, bubbly, and the cheese on top is melted and golden brown.

💡 Make-Ahead & Storage: This casserole can be assembled, covered, and refrigerated up to 24 hours before baking. Add 5-10 minutes to the baking time if cooking straight from the refrigerator.
