Instructions
Step 1: Prepare the Cream Base
- Allow the 1 pkg (8 oz) cream cheese to stand at room temperature until soft, then beat in a mixing bowl until fluffy.
- Mix the 1/4 cup sugar and 1/4 tsp salt together, then add them to the beaten cream cheese along with 1 cup sour cream, blending until smooth.
Step 2: Fold in Fruits and Freeze
- Gently fold the drained 1 can (16 oz) dark sweet cherries, 1 can (16 oz) sliced apricots, 1 large can crushed pineapple, and 2 cups miniature marshmallows into the cream cheese mixture.
- If desired, fold in chopped nuts and a few drops red food coloring to tint the mixture a festive pink.
- Pour the mixture into a loaf pan and freeze until completely firm, at least 4 hours.
Step 3: Slice and Serve
- Remove from the freezer and let the salad stand out at room temperature for a short while to soften slightly before slicing into clean portions.
