Instructions

Step 1: Assembly and Orange Layer

  1. Line the bottom and sides of a 9” springform pan with 18-20 ladyfingers, split in half.
  2. Mix 1 quart vanilla ice cream with the 1 frozen orange-juice concentrate.
  3. Pour into mold over the bottom layer of ladyfingers.
  4. If ice cream becomes too soft, refreeze slightly before pouring. Freeze firm.

Step 2: Raspberry and Pineapple Layer

  1. Purée the 2 packages frozen raspberries and two 9-ounce cans crushed pineapple—or use the blender—and add the 1 tablespoon frozen lemonade concentrate.
  2. Strain to remove seeds and freeze until partially frozen.
  3. Place in a chilled bowl and beat slightly.
  4. Spoon over orange layer and refreeze until firm.

Step 3: Final Layer and Freezing

  1. To the other 1 quart vanilla ice cream add 1 teaspoon almond flavoring, 1 teaspoon rum flavoring, 6 maraschino cherries, and 3 tablespoons blanched pistachio nuts.
  2. Pour over raspberry layer and freeze overnight until completely firm.

Step 4: Serving

  1. Remove cake from freezer and place in refrigerator about 2 hours before serving.
  2. Remove from pan, and garnish with sweetened whipped cream, sugared strawberries, and mint.

💡 Make-Ahead & Storage: Cover and freeze overnight for up to several days. Transfer to the refrigerator about 2 hours before serving to soften slightly.
