Instructions

Preparation and Baking

  1. Preheat your oven to 350°F.
  2. In a large mixing bowl, thoroughly combine the 1 1/2 lbs ground round, 2 grated onions, 4 or 5 minced garlic cloves, 1/2 cup salsa, 1 cup catsup, 1 1/2 chopped green peppers, 1/3 cup prepared mustard, 1 tbsp horseradish, 1/2 tsp sugar, salt, and black pepper.
  3. Incorporate the 2 eggs and 2/3 cup oatmeal into the mixture, blending gently until just combined to keep the texture light.
  4. Shape the mixture into a cohesive loaf and place it into a greased baking dish.
  5. Bake in the preheated 350°F oven for 1 hour until the meatloaf is firm to the touch and reaches an internal temperature of 160°F.
