Instructions

Cooking

  1. Bring 28 oz. tomatoes, 16 oz. salsa, 15 oz. black beans, 10 oz. frozen corn, 1 c. sliced zucchini, and 1 t. chili powder to boil; reduce heat and simmer for 10 minutes until vegetables are tender and flavors meld.

Assembly

  1. Sprinkle 2 T. cheddar cheese at the bottom of each serving bowl.
  2. Top with hot chili and an additional 2 T. cheddar cheese.
  3. Garnish with hot red pepper slices, if desired.
