Instructions
Step 1: Soup Base
- Combine the cooked 1 shank soup bone, 2 onions, 2 to 3 c. celery, 1 tbs. nutmeg, and salt and pepper in a kettle and bring to a simmer.
Step 2: Making Dumplings
- Crumble the white part of 1 loaf state bread into a bowl.
- Pour over 4 tbs. melted marrow or butter.
- Add a little salt and 2 tsp. nutmeg.
- Add 2 or 3 egg whites which have been well beaten, and mix lightly but well.
- Form the mixture into balls the size of golf balls and let stand for 15 min.
Step 3: Cooking Dumplings
- Drop the dumplings into the kettle of soup which must be at the lowest boiling point.
- Simmer for 30-40 M. until dumplings are cooked through and tender.
💡 Make-Ahead & Storage: Soup base can be prepared a day in advance; shape and drop dumplings just before serving.
