Instructions

Step 1: Simmer the Vegetables

  1. Mix the 2 cups potatoes, 1/2 cup carrots, 1/2 cup celery, and 1/4 cup onion with 2 cups boiling water in a saucepan.
  2. Simmer covered for 15 minutes until tender, then set aside.

Step 2: Prepare the Base and Finish

  1. Melt 1/4 cup margarine in a large saucepan.
  2. Stir in 1/4 cup flour, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
  3. Whisk in 2 cups milk and cook until thickened, stirring constantly until smooth.
  4. Stir in 2 cups cheddar cheese until completely melted and smooth.
  5. Add the cooked veggies with their cooking liquid along with 1 cup ham.
  6. Heat just to serving temperature, stirring occasionally, and ensure you do not boil.
