Instructions

Step 1: Prepare the Filling

  1. In a mixing bowl, beat 1/3 cup butter, 2/3 cup sugar, and 2 egg yolks until smooth and creamy. Stir in 1 1/2 cups crushed pineapple.
  2. In a separate small bowl, dissolve 2 tsp cornstarch in 2/3 cup cream, then add to the pineapple mixture and mix well.
  3. In a clean bowl, beat the 2 egg whites until stiff peaks form, then gently fold them into the pineapple mixture until just combined.

Step 2: Bake

  1. Pour the mixture into a large 1 unbaked pie shell.
  2. Bake at 450°F for 10 minutes, then reduce the heat to 350°F and bake for an additional 30 minutes until the filling is set and the top is golden brown.
