Instructions

Prep

  1. Preheat oven to 400°F (200°C). Line a muffin pan with cupcake papers.

Make the Batter

  1. In a large bowl, combine the 2 cups flour, 2/3 cup sugar, 1 tbsp baking powder, and 1 tsp salt.
  2. Stir in the 3/4 cup chopped nuts and 1/2 cup golden raisins.
  3. In a separate bowl, whisk together the 1/2 cup milk, 1/3 cup oil, 2 eggs, and 2 tsp lemon flavoring.
  4. Pour the wet mixture into the dry flour mixture, add the 1 cup shredded zucchini, and stir just until moistened.

Bake and Glaze

  1. Spoon the batter evenly into the prepared muffin cups.
  2. Bake for 20 to 25 minutes until the tops are golden brown and spring back when lightly touched.
  3. Remove the muffins from the pan.
  4. In a small bowl, combine the 1/2 cup powdered sugar and 2-3 tsp fresh lemon juice until smooth.
