Instructions
Step 1: Sauté Aromatics
- In a large skillet, cook 1/2 cup chopped onion, 1/2 cup chopped celery, and 1 clove garlic in 3 T. salad oil until tender but not brown.
Step 2: Simmer Base
- Add one 16 oz. can tomatoes, one 8 oz. can tomato sauce, 1 T. Worcestershire sauce, 1/2 t. salt, 1/2 to 1 t. chili pepper, and 1 dash bottled hot pepper sauce.
- Simmer, uncovered, for 45 minutes until thickened and aromatic.
Step 3: Thicken and Add Shrimp
- In a small bowl, mix 2 t. cornstarch with 1 T. cold water; stir into the simmering sauce.
- Cook, stirring constantly, until bubbly and slightly thickened.
- Add 1 1/2 lbs. fresh or frozen shelled shrimp and 1/2 cup chopped green pepper.
- Cover the skillet and simmer for 5 minutes until the shrimp turn pink and opaque.
- Serve hot over cooked rice.
💡 Make-Ahead & Storage: Store leftover creole in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop before serving over fresh rice.
