Instructions
Preparation & Cooking
- In a large pot, heat the 6 tbsp olive oil over medium heat. Sauté the 1 finely chopped onion and 6 minced garlic cloves until they are golden brown, soft, and highly fragrant.
- Add the 1 lb fresh tuna, 1 red pepper, 3 green peppers, pinch of saffron, 6 peeled & chopped tomatoes, and 6 cubed potatoes to the pot.
- Pour in enough water to cover the ingredients and make six servings.
- Season the mixture with salt and pepper to taste.
- Bring to a boil, then lower the heat and simmer gently until the potatoes and other vegetables are cooked through and tender but not mushy, and the tuna is cooked.
💡 Make-Ahead & Storage: Canned tuna can be used as a substitute if rinsed with boiling water first. Store leftovers in an airtight container in the refrigerator for up to 2 days.
