Instructions

Step 1: Prep and Boil

  1. Boil the 4-5 medium yellow squash with the 1 small onion in a saucepan until tender.
  2. Drain well in a colander to remove excess moisture.

Step 2: Mix and Season

  1. In a mixing bowl, add 1/2 stick butter, half of the 1 cup cracker crumbs, and 1 egg. Mix well.
  2. Season to taste with salt, pepper, and garlic salt.

Step 3: Assemble and Bake

  1. Transfer the mixture to a greased baking dish.
  2. Cover the top with the remaining crumbled cracker crumbs and 1/2 cup cheese.
  3. Bake at 350°F for 30 minutes until the cheese is melted and bubbly, and the top is golden brown.
