Instructions

Preparation and Baking

  1. Cook the 4 lbs potatoes in boiling salted water in a large kettle for 15 minutes or until fork-tender, then drain thoroughly.
  2. Mash the drained potatoes in a large bowl of a mixer. Add the 8 oz cream cheese, 1 cup sour cream, 2 tsp salt, 1/4 tsp black pepper, and 1 clove crushed garlic.
  3. Beat at high speed until the mixture is completely smooth, light, and fluffy. Gently stir in the 1/4 cup chopped chives.
  4. Spoon the mixture into a lightly greased 10-cup baking dish. Sprinkle the top evenly with 1/2 tsp paprika and dot with 1 tbsp butter.
  5. Bake in a moderate oven at 350°F for 30 minutes or until the top is lightly golden and the casserole is heated through.
