Instructions
Step 1: Prep and Boil
- Boil the cubed 4 cups zucchini (don’t peel) in salt water until tender. Drain well.
Step 2: Mix and Bake
- Place the 1 stick margarine over the hot drained zucchini.
- Mix in the 1 cup cream of chicken soup, 1 cup sour cream, and 1 cup plain croutons in a baking dish.
- Pour the remaining 1/2 cup plain croutons on top.
- Bake in a 350° oven for 20 minutes until bubbly and golden.
