Instructions

Step 1: Preparing the Carrots

  1. Cook 2 lb carrots (cut up and sliced) in salted water. Bring to a boil, remove from heat, and let carrots sit in boiling water for 10 minutes; drain and cool until tender-crisp.

Step 2: Making the Dressing and Marinating

  1. Combine 1 can tomato soup, 1/2 cup oil, 1 cup sugar, 3/4 cup vinegar, 1 tsp dry mustard, 1 tsp Worcestershire sauce, 1 tsp salt, and 1/4 tsp pepper to form the dressing.
  2. Alternate layers of the cooked carrots and 1 medium-sized onion (thin sliced) in a container.
  3. Pour the dressing over the top and let stand overnight in a closed container in the refrigerator.
