Instructions

Step 1: Prep and Sauté

  1. Sauté 1/2 cup celery and 1/2 cup onion in 1 tbsp margarine until tender.
  2. Cook the 1 cup rice separately according to package directions.

Step 2: Combine and Bake

  1. Add 1 cup mushroom soup and 1 cup cream of celery soup to the sautéed celery and onions.
  2. Mix in the cooked 1 cup rice, chopped 1 pkg broccoli, and 8 oz jalapeno cheese (or sharp cheddar), seasoning with salt and pepper to taste.
  3. Transfer to a 3-quart casserole dish.
  4. Bake at 350°F for 30 mins, or alternatively at 375°F for 20 mins, until bubbling hot and melted throughout.
