  1. Cook 2 lbs. broccoli until just crunchy; drain well.
  2. In a saucepan, sauté 1/4 cup chopped onion in 4 Tbsp. butter.
  3. Stir in 4 Tbsp. flour and 1 tsp. seasoned salt; cook until bobbly.
  4. Stir in 1 cup milk and cook until mixture thickens and boils for 1 minute.

Assembly & Baking

  1. Beat 3 eggs slightly in a small bowl. Add a little hot sauce to temper the 3 eggs, then stir the egg mixture back into the main sauce.

  4. Fold the sauce into the drained 2 lbs. broccoli and spoon into a well-greased 5-cup mold.
  5. Set the mold in a baking pan and place on an oven shelf. Pour boiling water into the baking pan to a depth of about 1 inch.

  7. Let stand for a few minutes, loosen edges, and invert onto a serving dish.

💡 Make-Ahead & Storage: The broccoli mold can be cooked, cooled, and refrigerated prior to serving. Reheat gently and fill center with freshly prepared herb-butter tomatoes right before serving.
