Instructions
Step 1: Prep and Mix
- Preheat oven to 350°F. Grease a casserole dish with butter or cooking spray.
- In a large bowl, combine the 1 (16-ounce) can cream-style corn, thawed and drained 1 (10-ounce) pkg frozen chopped broccoli, beaten 1 large egg, 1/2 cup of Ritz crackers, 1 tablespoon onion, 2 tablespoons butter, 1/2 teaspoon salt, and black pepper. Stir well until thoroughly incorporated.
Step 2: Assemble and Bake
- Pour the mixture into the prepared casserole dish.
- In a small bowl, combine the additional 1/2 cup of Ritz crackers with 1-2 tablespoons butter to moisten them.
- Sprinkle the buttered crumbs evenly over the top of the casserole.
- Bake for 35 to 40 minutes, or until the casserole is set and the topping is golden brown and fragrant.
