Instructions

Step 1: Prepare the Base and Sauce

  1. Cook 2 lbs broccoli until just crunchy; drain well.
  2. Sauté ¼ cup chopped onion in 4 tbsp butter.
  3. Stir in 4 tbsp flour and 1 tsp seasoned salt; cook until bubbly.
  4. Stir in 1 cup milk and cook until it thickens and boils one minute.

Step 2: Combine and Bake

  1. Beat 3 eggs slightly.
  2. Add a little sauce to mix with the eggs, then stir the eggs back into the sauce.
  3. Cook over medium heat for about 3 minutes, until the mixture thickens again.
  4. Stir in ½ cup mayonnaise and ¼ cup parsley.
  5. Fold the sauce into the drained broccoli.
  6. Spoon into a well-greased 5-cup mold, set the mold in a baking pan, and place the pan on an oven rack.
  7. Pour boiling water into the baking pan to a depth of about one inch.
  8. Bake at 350°F for 30 minutes or until set.

Step 3: Unmold and Serve

  1. Let stand a few minutes, loosen, then invert the broccoli crown onto a serving dish.
  2. Prepare Herb-Butter Tomatoes: Melt 2 tbsp butter with ½ tsp marjoram, stir in tomatoes, and cook for 5 minutes or just until heated through.
  3. Serve with Herb-Butter Tomatoes in the center.

💡 Make-Ahead & Storage: The broccoli mixture can be assembled and spooned into the mold a few hours ahead before baking in the water bath just prior to serving.
