Instructions
Step 1: Combine and Chill
- In a medium mixing bowl, combine the 3 cups plain yogurt, 2 cloves garlic (peeled, crushed, and minced), 1 medium cucumber (peeled and grated), 1 generous tbsp olive oil, juice of 1/2 lemon (strained), and salt to taste. Do not add the herbs yet.
- Mix together thoroughly until all ingredients are evenly distributed.
- Seal the bowl tightly with plastic wrap and refrigerate for 8 hours or overnight to allow the garlic and cucumber flavors to fully infuse the yogurt.
Step 2: Garnish and Serve
- Before serving, give the chilled mixture a thorough stir.
- Spoon the mixture into chilled soup cups or serving bowls.
- Sprinkle generously with chopped fresh mint or dill (which must be fresh and not dried) just before serving for a bright, aromatic finish.
💡 Make-Ahead & Storage: This dish requires at least 8 hours of chilling to develop its signature flavor. Store sealed in the refrigerator for up to 3 days.
