Instructions

Step 1: Blend & Chill Base

  1. Put the first 5 ingredients—1 cup extra virgin olive oil, 1/4 cup apple cider vinegar, 1/8 cup soy sauce, 3 cloves garlic, and 1/8 tsp pepper—into a blender.
  2. Blend until completely smooth, then refrigerate the mixture directly in the blender jar or a container until it is slightly cloudy and chilled.

Step 2: Add Cheese & Adjust

  1. Once chilled, crumble half of the 2 oz blue cheese (or feta) and add it to the blender along with the 3 tbsp parmesan cheese.
  2. Blend slightly, just until the cheeses are incorporated but the texture remains pleasantly crumbly.
  3. Taste the dressing; if it seems too sharp, add 1 tsp sugar and pulse briefly to combine.

💡 Make-Ahead & Storage: Store in an airtight jar in the refrigerator for up to one week. Shake vigorously before using as the oil and vinegar may separate.
