Instructions

Step 1: Layering the Casserole

  1. Butter a casserole dish well.
  2. Drain well the cling peaches, pears, apricots, and chunk pineapple.
  3. Arrange the fruit in layers in the casserole.
  4. Between each layer, sprinkle with cinnamon and crumbled vanilla wafers.
  5. Top the entire dish with additional crumbled vanilla wafers.

Step 2: Sauce and Baking

  1. In a small container, mix together 2 jiggers of sweet wine (or brandy/cordial) and 2 tablespoons of vanilla.
  2. Pour the liquid mixture evenly over all the ingredients in the casserole.
  3. Bake uncovered at 325°F for about 1 1/2 hours until hot and bubbling throughout.

💡 Make-Ahead & Storage: Assemble the fruit and wafer layers in the casserole dish a few hours ahead, but pour the wine and vanilla mixture right before baking.
