Instructions

Step 1: Make the Dressing

  1. In a small bowl or measuring cup, whisk together the 1/4 cup oil, 1 tbsp cider vinegar, 1 pinch cayenne pepper, salt, and black pepper to taste. Stir in the 1 or 2 cloves garlic, crushed until the dressing is emulsified and fragrant.

Step 2: Combine and Toss

  1. In a large mixing bowl, combine the 2 cups cooked corn, 1 cup cooked peas, 1 cup chopped cucumber, and 2 or 3 chopped green onions.
  2. Pour the prepared dressing over the vegetables and toss thoroughly until everything is evenly coated and glistening. Let sit for at least 10 minutes before serving to allow the flavors to meld beautifully.
