Instructions

Step 1: Mix Salad

  1. In a large bowl, combine 1 (13 oz.) can chicken breast in water (or 1 1/2 cups cooked, chopped chicken), 1/3 cup orzo, 2 ribs celery, 1 cup whole red or green seedless grapes, 8 oz. crushed pineapple, 10 dried apricots, 1/3 cup white or regular raisins, and 1/3 cup dried cranberries. Mix all of these ingredients well.

Step 2: Prepare Dressing and Combine

  1. In a separate bowl, mix together 1/2 cup mayonnaise, 1/2 cup sour cream, 2 T. reserved pineapple juice, 2 tsp. dried tarragon leaves, 1 tsp. chopped fresh or dried parsley leaves, and salt & pepper to taste.
  2. Add the dressing to the salad ingredients and mix well until evenly coated.

💡 Make-Ahead & Storage: Refrigerate, preferably overnight, to allow the salad to thoroughly blend flavors before serving chilled.
