Instructions

Step 1: Combine Vegetables

  1. In a large mixing bowl, combine the 1 cup yellow wax beans, 1 cup red kidney beans, 1 cup green beans, and 1 cup garbanzo beans.
  2. Gently toss in the 1 thin-ringed green pepper, 1 crisp-ringed purple onion, and 1 small jar pimientos.

Step 2: Dress and Marinate

  1. In a separate bowl or jar, whisk together the 1/3 cup corn oil, 1/2 cup sugar, 3/4 cup vinegar, 1 tsp salt, and black pepper until the sugar is fully dissolved.
  2. Pour the dressing over the bean mixture and toss thoroughly to coat.
  3. Transfer the salad to a covered glass or pottery jar. Keep the mixture turned at intervals to marinate it thoroughly before serving.

💡 Make-Ahead & Storage: This salad is best made ahead of time to allow the flavors to meld. It will keep indefinitely when stored in a covered glass or pottery jar in the refrigerator. If doubling the recipe, simply use 1 full can of each bean type, well drained.
