Instructions

Step 1: Making the Base

  1. Bring 2 small pkg apricot jell-o, 2/3 C. water, and 2/3 C. sugar to a boil in a saucepan.
  2. Remove from heat and dissolve 1 (8 oz) cream cheese in it (off stove).
  3. Add 2 jars strained apricot baby food and 1 #2 can crushed pineapple, then let cool completely.

Step 2: Whipping and Assembling

  1. Beat 1 lg can evaporated milk until stiff.
  2. Fold the cooled apricot mixture into the whipped milk.
  3. Pour into a 13x9 pan and sprinkle with 1/2 C. chopped walnuts on top. Chill until firm.

💡 Make-Ahead & Storage: Cover and refrigerate for at least 4 hours or overnight until set before serving.
