Instructions
Step 1: Prep the Vegetables
- Thoroughly drain the 1 can shoepeg corn, 1 can cut green beans, 1 small can English peas, and 1 large jar diced pimentos.
- Chop the 4 stalks celery, 1 medium purple onion, and 1 medium green pepper.
- In a large bowl, combine all of the prepared, drained vegetables and chopped aromatics until evenly distributed.
Step 2: Make the Marinade
- In a small saucepan, combine the 3/4 cup sugar, 1/2 cup vinegar, 1/4 cup oil, 1 Tbsp water, salt, and pepper.
- Place the saucepan over low heat and stir constantly just until the sugar is completely dissolved, ensuring the mixture does not come to a boil.
Step 3: Marinate and Serve
- Carefully pour the warm marinade over the vegetable mixture in the large bowl.
- Toss gently but thoroughly until all ingredients are evenly coated.
