Instructions

Step 1: Prep the Vegetables

  1. Thoroughly drain the 1 can shoepeg corn, 1 can cut green beans, 1 small can English peas, and 1 large jar diced pimentos.
  2. Chop the 4 stalks celery, 1 medium purple onion, and 1 medium green pepper.
  3. In a large bowl, combine all of the prepared, drained vegetables and chopped aromatics until evenly distributed.

Step 2: Make the Marinade

  1. In a small saucepan, combine the 3/4 cup sugar, 1/2 cup vinegar, 1/4 cup oil, 1 Tbsp water, salt, and pepper.
  2. Place the saucepan over low heat and stir constantly just until the sugar is completely dissolved, ensuring the mixture does not come to a boil.

Step 3: Marinate and Serve

  1. Carefully pour the warm marinade over the vegetable mixture in the large bowl.
  2. Toss gently but thoroughly until all ingredients are evenly coated.
  3. Cover the bowl and refrigerate for at least several hours, or preferably overnight, until the flavors are fully melded and the vegetables are tender-crisp. Serve chilled.
