Instructions

Step 1: Toast the Ramen and Nuts

  1. Preheat oven or toaster oven to 350°F (175°C). Crumble the 1 package dry Top Ramen noodles inside the package (set aside the seasoning packet for dressing). Spread the crumbled ramen noodles, 1/4 cup sesame seeds, and 1/4 to 1/2 cup slivered almonds onto an ungreased baking sheet. Toast in the oven for 5-8 minutes, stirring frequently, until lightly golden brown and fragrant. Be careful not to burn them. Remove from oven and let cool completely.

Step 2: Prepare the Dressing

  1. In a small bowl or jar, combine the 1/2 cup vegetable oil, 1/4 cup rice vinegar, the reserved 1 Top Ramen seasoning packet, 3 tbsp soy sauce, 1 tbsp sugar, and salt & pepper to taste. Whisk or shake vigorously until well combined and the sugar is fully dissolved.

Step 3: Assemble and Chill

  1. In a large salad bowl, combine the 1 package coleslaw mix, the 4 cooked and diced chicken breasts, and the 1 bunch chopped cilantro.
  2. Add the prepared dressing and the cooled, toasted ramen noodle, sesame seed, and almond mixture to the bowl.
  3. Toss all ingredients together gently until everything is evenly coated.
  4. Cover and chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld. Toss again briefly before serving.

💡 Make-Ahead & Storage: The dressing and toasted noodle mixture can be prepared 1–2 days ahead. Combine with the fresh greens and chicken at least 30 minutes before serving.
