Instructions
Step 1: Toast the Ramen and Nuts
- Preheat oven or toaster oven to 350°F (175°C). Crumble the 1 package dry Top Ramen noodles inside the package (set aside the seasoning packet for dressing). Spread the crumbled ramen noodles, 1/4 cup sesame seeds, and 1/4 to 1/2 cup slivered almonds onto an ungreased baking sheet. Toast in the oven for 5-8 minutes, stirring frequently, until lightly golden brown and fragrant. Be careful not to burn them. Remove from oven and let cool completely.
Step 2: Prepare the Dressing
- In a small bowl or jar, combine the 1/2 cup vegetable oil, 1/4 cup rice vinegar, the reserved 1 Top Ramen seasoning packet, 3 tbsp soy sauce, 1 tbsp sugar, and salt & pepper to taste. Whisk or shake vigorously until well combined and the sugar is fully dissolved.
Step 3: Assemble and Chill
- In a large salad bowl, combine the 1 package coleslaw mix, the 4 cooked and diced chicken breasts, and the 1 bunch chopped cilantro.
- Add the prepared dressing and the cooled, toasted ramen noodle, sesame seed, and almond mixture to the bowl.
- Toss all ingredients together gently until everything is evenly coated.
- Cover and chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld. Toss again briefly before serving.
💡 Make-Ahead & Storage: The dressing and toasted noodle mixture can be prepared 1–2 days ahead. Combine with the fresh greens and chicken at least 30 minutes before serving.
