Instructions
Step 1: Prep the Fruit
- Wash 2 pints strawberries. Discard stems and crush the fruit using a potato masher. Measure out exactly 2 cups crushed strawberries (do not use extra or the jam may not set properly).
Step 2: Mix with Sugar
- Stir 4 cups sugar into the 2 cups crushed strawberries in a large bowl. Mix well, then let stand for 10 minutes, stirring occasionally to help dissolve the sugar.
Step 3: Prepare Pectin and Combine
- In a separate measuring cup, stir 1 pouch (3 oz) liquid pectin into 2 Tbsp lemon juice.
- Stir the pectin mixture into the strawberry mixture. Stir constantly until the 4 cups sugar is completely dissolved and no longer grainy, about 3 minutes.
Step 4: Jar and Set
- Pour the jam into prepared containers, leaving 1/2 inch of headroom at the top to allow for expansion during freezing. Cover with tight-fitting lids.
- Let stand at room temperature for 24 hours until set and firm.
💡 Make-Ahead & Storage: Store in the refrigerator for up to 3 weeks, or freeze for up to 1 year. Thaw frozen jam in the refrigerator before using.
