Instructions
Step 1: Prepare the Meat Filling
- In a skillet, brown 1 1/2 lb ground beef and 1 chopped onion until the meat is fully cooked and no longer pink.
- Season with salt, black pepper, and chili powder to taste.
- Stir in 2 cups tomato sauce and 1 can corn. Mix well and let simmer briefly.
Step 2: Assemble and Bake
- Preheat oven to 325°F.
- In a baking dish, place a layer of tortillas, then cover with a portion of the meat mixture, followed by a layer of grated cheese and chopped black olives.
- Continue layering in this order, ending with a generous layer of grated cheese and chopped black olives on top.
- Bake at 325°F for 30 minutes until the cheese is melted, bubbly, and golden brown around the edges.
💡 Make-Ahead & Storage: Can be assembled a day in advance, covered, and refrigerated. Add 5-10 minutes to the baking time if baking straight from the refrigerator.
