Instructions

Step 1: Browning the Meats and Vegetables

  1. Brown the 3 1/2 to 4 lbs chicken in 2 tbsp butter.
  2. Brown the 5 slices bacon cut in pieces.
  3. Sauté 1/2 lb fresh mushrooms (or 1 can mushrooms), 1 onion (sliced), and 1/4 green pepper (sliced) until they reach a golden brown color. Season to taste.

Step 2: Simmering

  1. Mix 1 cup cold water and 2 tbsp flour together to make a paste.
  2. Put the chicken in a covered skillet and cover with the other ingredients.
  3. Pour the paste in, add a little extra water, cover, and simmer slowly for 1 1/2 hours until tender and aromatic.
  4. Serve warm with potatoes.

💡 Make-Ahead & Storage: Can be prepared up to a day ahead and gently reheated on the stove over low heat before serving.
