Instructions
Step 1: Prep and Filling
- Preheat your oven to 450°F.
- Prepare a 10-inch pie crust and keep it refrigerated until ready to use.
- Grate 1 cup Swiss cheese and fry 10 slices bacon until crisp, then crumble (or chop 1 cup leftover ham very small).
- Sprinkle the crumbled bacon and grated Swiss cheese evenly across the bottom of the prepared pie crust.
Step 2: Mixing the Custard
- In a mixing bowl, combine 4 eggs, 2 cups half-and-half, a pinch sugar, a pinch nutmeg, 3/4 tsp salt, 1/2 tsp pepper, and a dash red pepper.
- Mix together thoroughly and pour the custard mixture directly over the bacon and cheese in the pie crust.
Step 3: Baking and Resting
- Bake at 450°F for 12 minutes, then reduce the oven heat to 325°F and continue to cook for 25 to 30 more minutes.
- Test for doneness with a knife like a custard; the center should be set and the knife should come out clean.
- Let the quiche set out for about half an hour after baking before cutting for cleanest slices.
