Instructions
Step 1: Prep and Sauce
- Chop the 1 small onion and grate the 1/2 package longhorn cheese.
- In a skillet, brown the 1 lb. ground beef until fully cooked and no longer pink, then drain excess fat.
- In a saucepan, mix the 1 can cream of chicken soup with 1/2 cup to 1 cup green chili (use half or the whole can depending on how hot you want it) and heat until warm and well combined.
Step 2: Assembly and Baking
- Spread a little of the warm cream of chicken soup and green chili mixture in the bottom of a baking dish.
- Add one corn tortilla, then sprinkle with the grated longhorn cheese, chopped onion, and browned ground beef.
- Drizzle a little more of the cream of chicken soup and green chili mixture over the layer.
- Continue layering with the remaining corn tortillas, longhorn cheese, onion, ground beef, and cream of chicken soup mixture until the sauce runs out or the dish is filled.
- Bake at 350°F (175°C) for 20 to 25 minutes until the cheese is melted, bubbly, and slightly golden brown on top.
💡 Make-Ahead & Storage: Can be assembled ahead of time, covered, and refrigerated for up to 24 hours before baking. Add 5-10 minutes to the baking time if cooking straight from the fridge.
