Instructions
Step 1: Toasting Hazelnuts & Frying Chicken
- Place 2 oz hazelnuts in a baking dish in the oven at 450°F, oven door open slightly, until you smell it toasted.
- Dip the 2 chicken breasts in flour seasoned with salt and pepper.
- Beat 1 egg yolk with 1 tbsp oil and spread it over the chicken breasts, then dip in flour again.
- Fry over medium heat in about 1 tbsp butter for about 3 minutes on each side until golden brown and cooked through.
Step 2: Preparing Sauce and Serving
- Mix 2 tsp arrowroot with a small amount of chicken stock together.
- Put about 1/2 pound of chicken sauce on to boil and add the arrowroot mixture along with 20g butter.
- Put the toasted nuts in a blender and add 3 tsp of the hazelnuts to the butter, then add the sauce, some lemon juice, some cream, salt, pepper, and 1/3 oz brandy.
- Put the chicken breasts on a heatproof plate and pour the sauce over it until sizzling and aromatic.
💡 Make-Ahead & Storage: The hazelnuts can be toasted and ground ahead of time, but the chicken is best prepared fresh for optimal texture.
