Instructions

Step 1: Sauté and Prep

  1. Sauté the 1 large onion in a pan until translucent and fragrant.
  2. Grate the 1 large zucchini using a box grater.

Step 2: Mix the Burger Base

  1. In a large mixing bowl, combine the 1 lb firm tofu, sautéed 1 large onion, grated 1 large zucchini, whole wheat flour, garlic, 3 egg whites, 1 egg yolk, tamari, fresh parsley, black pepper, cumin, ½ cup wheat germ, and nutritional yeast until a cohesive mixture forms.

Step 3: Cook the Burgers

  1. Plop the mixture, keeping it not too thick, onto a pan on low heat and cook until golden brown and firm on both sides.
