Instructions
Step 1: Brown the Beef
- In a large heavy skillet over medium heat, brown the 1 lb lean ground beef, stirring to break up until no longer pink.
Step 2: Sauté Vegetables
- Add the 3 med. onions and 1 large green pepper to the skillet. Sauté, stirring occasionally, just until the vegetables are tender.
Step 3: Combine Ingredients
- Stir in the 1 t salt, 1 t basil, 1/2 t ground pepper, 1/4 t sugar, 1/4 t oregano, 1/8 t crushed red pepper, 3 large cloves garlic, 2 T chopped parsley, 1 sm. can (8 oz.) red kidney beans, and 1 sm. can (8 oz.) golden hominy.
Step 4: Simmer
- Simmer uncovered, gradually adding about 1/2 C reserved bean liquid and stirring occasionally, for 10 minutes or until the flavors are fully blended and rich. (If using fresh basil, stir in just before serving and heat through).
Step 5: Garnish and Serve
- Garnish with fresh parsley sprigs and serve warm.
