Instructions

Step 1: Prep and Blend

  1. Drain the enough to make 2 cups fresh spinach cooked in salted boiling water (or frozen).
  2. Chop the 1/2 cup chopped onion.
  3. In a blender, add the 2 eggs, 1/2 cup milk, and drained fresh spinach and chop until smooth.

Step 2: Assemble and Bake

  1. Pour the mixture into a buttered baking dish, add the 1/2 cup grated cheese, and top with buttered bread crumbs.
  2. Bake for 20 minutes at 350 degrees until golden brown and set.
