Instructions
Step 1: High-Heat Sear
- Preheat the oven to 500°F with a Pyrex baking dish inside to heat up.
- Place a bit of chicken fat trimmings in the bottom of the hot Pyrex dish and let it render in the oven.
- Place the 3 pounds or less sirloin tip roast in the hot pan and brown it well on each side until nicely seared in the 500°F oven.
- Season the roast with salt.
Step 2: Slow Roast
- Turn the oven temperature down to 350°F.
- About 2 hours after the initial browning, add the 3 onions to the pan.
- Continue to roast until the desired doneness is reached and the meat is tender and juicy.
