Instructions

Step 1: Prep and Marinate the Meat

  1. To cut the approximately 2 packages lean short ribs as thin as possible, slice when partly frozen.
  2. Tenderize the sliced pieces with a knife, cutting meat along the bone (if using short ribs). Alternatively, you can also use flank steak.
  3. In a bowl, combine the marinade ingredients: 1 cup soy sauce, 10 tablespoons sugar, 1 teaspoon accent, 1/2 tablespoon salad oil, 1-2 cloves mashed garlic, dash salt + pepper, 1 tablespoon sesame seed, and chopped green onion.
  4. Add the prepared meat to the marinade and let sit for 1/2 hour.

Step 2: Grill and Serve

  1. Preheat a hibachi or barbecue grill to high heat.
  2. Cook the lean short ribs for a couple of seconds per side until caramelized and done.
  3. Remove from heat and eat hot.

💡 Make-Ahead & Storage: Marinated meat can be covered and refrigerated for up to 24 hours before grilling.
