Instructions

Step 1: Prep and Marinate

  1. Slice the 1 1/2 lbs flank steak thinly across the grain into strips no thicker than 1/8 inch (it slices best when partially frozen).
  2. In a bowl, toss the steak strips with 4 tsp cornstarch, 4 tsp vinegar, 1 Tbsp sugar, 1/2 tsp salt, and 1/4 tsp freshly ground pepper. Allow to stand for 30 minutes.

Step 2: Cook Bacon and Beef

  1. In a large skillet, slowly cook 4 slices bacon until almost crisp. Remove bacon from the pan and set aside.
  2. Remove any bacon fat from the skillet in excess of 4 tablespoons. Heat the remaining bacon fat in the skillet until very hot.
  3. Add the marinated beef strips to the very hot skillet and cook over very high heat for just a few minutes, tossing lightly, just until browned and sizzling. Remove the meat from the pan and set aside.

Step 3: Toss Vegetables and Finish

  1. Cut the 1 large head iceberg lettuce (or romaine) across the head into 1/2-inch thick slices, thinly slice the 2 green onions, and cut the 8 very thin slices fresh lemon into quarters.
  2. Add the lettuce, onions, and lemon quarters to the pan. Cook, tossing frequently, for a minute or two, until barely wilted and tender-crisp.
  3. Return the cooked beef and bacon to the skillet and toss just until heated through.
  4. Garnish with additional sliced green onions if desired and serve immediately.

💡 Make-Ahead & Storage: Best served immediately upon preparation; ingredients can be prepped and portioned ahead of time and stored separately in the refrigerator.
