Instructions

Step 1: Prep and Sauce

  1. Preheat your oven to 350°F.
  2. Cook the 40 ounces frozen brussels sprouts according to the directions on the box. Drain them well.
  3. In a large saucepan, melt the 4 tablespoons butter and stir in the 4 tablespoons flour to make a roux, cooking for 1-2 minutes until smooth and fragrant.
  4. Gradually whisk in the 2 cups chicken broth and the 1 cup reconstituted nonfat dry milk. Stir constantly until the sauce thickens and bubbles.

Step 2: Assemble and Bake

  1. Add the 2 teaspoons paprika, 2 teaspoons salt, 1 teaspoon sugar, 1/4 cup pimento, and 2.5 pounds cooked chicken to the sauce. Stir until thoroughly combined.
  2. Arrange the cooked and drained brussels sprouts in a large casserole dish.
  3. Pour the creamed chicken mixture evenly over the sprouts.
  4. Bake at 350°F for 25-30 minutes, or until heated through and lightly browned and bubbly on top.

💡 Make-Ahead & Storage: Assemble the casserole ahead of time, cover tightly, and refrigerate for up to 24 hours before baking, adding a few extra minutes to the bake time if cold.
