Instructions
Step 1: Prep and Mix
- Cook the 1 1/4 C. cooked spaghetti, drain well, and set aside.
- In a 3-quart casserole, mix the 2 C. cooked hen (thighs), 1/2 C. chopped onion, 1/4 C. diced pimentos, 1/4 C. chopped green peppers, and the prepared 1 1/4 C. cooked spaghetti.
Step 2: Combine and Top
- Pour in the 1 can mushroom soup, 1/2 C. chicken stock, 1/2 t. salt, pepper to taste, and 1/4 C. grated longhorn cheese (reserving the remaining cheese). Mix thoroughly.
- Top the mixture evenly with the remaining 1 1/4 C. grated longhorn cheese.
Step 3: Bake
- Place the casserole in a cold oven, then set the temperature to 325-350°F and bake for 1 hour until bubbling and the cheese on top is melted and golden brown.
