Instructions
Step 1: Preparing the Base
- Soften 1 tbsp gelatine in 1/4 cup cold water.
- Beat 3 egg yolks, add 1/2 cup sugar, 1 tbsp lemon juice, and 1/2 tsp salt.
- Cook over hot water until thick, stirring constantly.
Step 2: Mixing and Congealing
- Add the softened 1 tbsp gelatine, 1 cup strawberry pulp and juice, and a few drops of red coloring to the hot egg mixture.
- Cool the mixture until it is just beginning to congeal.
Step 3: Folding and Assembling
- Whip the remaining egg whites and beat in the remaining 1/4 cup sugar until stiff peaks form.
- Fold the beaten whites into the congealing strawberry mixture.
- Pile the mixture into the 1 baked pastry shell.
Step 4: Serving
- Chill until completely set.
- Before serving, cover with a thin layer of 1 cup whipped cream and garnish with 1/2 cup strawberries.
💡 Make-Ahead & Storage: Chill the pie for at least 2 hours until set. Add whipped cream and fresh strawberries just before serving for the best texture.
