Instructions

Step 1: Making the Batter

  1. Cream 1/3 cup shortening with 1 cup light brown sugar until fluffy.
  2. Add 2 egg yolks and mix well.
  3. Add 3/4 cup milk to the mixture and stir to combine.
  4. Sift together 1 1/2 cups flour, 1/2 teaspoon salt, and 2 teaspoons Royal Baking Powder, then add to the wet ingredients.
  5. Mix in 1 cup nuts (preferably pecans) and 1 teaspoon vanilla.

Step 2: Baking and Icing

  1. Bake in a greased loaf pan in a moderate oven for 35 minutes, or until a golden brown color is achieved and a toothpick inserted in the center comes out clean.
  2. To make the maple icing: add 1/2 teaspoon butter to 2 tablespoons milk, stir in 1 1/2 cups confectioner’s sugar to make a smooth paste, and add 1/2 teaspoon maple flavoring.
  3. Cover top and sides of the cake with the maple icing and spread evenly.
  4. Sprinkle with additional nuts while the icing is still soft.

💡 Make-Ahead & Storage: Store the baked cake in an airtight container at room temperature for up to 2 days, or frost just before serving.
