Instructions

Step 1: Prepare the Dough

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together 3/4 cup shortening and 3/4 cup sugar until the mixture is light and fluffy.
  3. Beat in 1 egg, 1 cup cooked mashed carrots, 1 tsp vanilla extract, and 1 tsp lemon extract until thoroughly combined.
  4. In a separate bowl, whisk together 2 cups flour, 2 tsp baking powder, and 1 tsp salt (if using).
  5. Gradually stir the dry ingredients into the wet carrot mixture until a soft, cohesive dough forms.

Step 2: Bake the Cookies

  1. Drop the dough by rounded tablespoonfuls onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
  2. Bake for 10 to 12 minutes until the edges are lightly golden and the tops spring back when gently touched.
  3. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire cooling rack to cool completely.

Step 3: Frost (Optional)
