Instructions
Step 1: Prepare the Dough
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together 3/4 cup shortening and 3/4 cup sugar until the mixture is light and fluffy.
- Beat in 1 egg, 1 cup cooked mashed carrots, 1 tsp vanilla extract, and 1 tsp lemon extract until thoroughly combined.
- In a separate bowl, whisk together 2 cups flour, 2 tsp baking powder, and 1 tsp salt (if using).
- Gradually stir the dry ingredients into the wet carrot mixture until a soft, cohesive dough forms.
Step 2: Bake the Cookies
- Drop the dough by rounded tablespoonfuls onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
- Bake for 10 to 12 minutes until the edges are lightly golden and the tops spring back when gently touched.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire cooling rack to cool completely.
Step 3: Frost (Optional)
- In a small bowl, combine 1 1/2 cups powdered sugar, 1 tbsp melted butter, and orange rind as desired.
- Stir in orange juice as needed, a teaspoon at a time, until the frosting reaches a smooth, spreadable consistency.
- Spread the glaze over the completely cooled cookies and let it set before serving.
💡 Make-Ahead & Storage: Store frosted or unfrosted cookies in an airtight container at room temperature for up to 3 days. Unfrosted cookies can be frozen for up to 3 months; thaw and frost before serving.
