Instructions
Step 1: Prep the Cake and Gelatin
- In a first bowl, cut 1 small or medium angel food cake into cubes and set aside.
- In a second bowl, soften 1 Tbsp gelatin in 1 Tbsp cold water and 1/2 cup hot water. Let the mixture cool completely.
Step 2: Whip the Eggs and Cream
- In a third bowl, beat 3 egg yolks with 1/2 cup sugar until they are a pale, lemon yellow color.
- In a fourth bowl, beat 3 egg whites until stiff peaks form.
- In a fifth bowl, beat 1 pint whipping cream until thick.
Step 3: Fold and Assemble
- Gently fold the beaten 3 egg yolks and sugar mixture into the whipped 1 pint whipping cream.
- Fold this mixture into the beaten 3 egg whites.
- Mix in the cooled 1 Tbsp gelatin mixture and 1/2 tsp vanilla extract.
- Finally, fold in the cubed 1 small or medium angel food cake until evenly coated.
Step 4: Mold and Chill
- Place the mixture into a greased mold.
- Cover tightly with aluminum foil and let stand in the refrigerator overnight to set.
- Serve chilled with thawed strawberries on the side so each person can spoon them over their slice of cake.
💡 Make-Ahead & Storage: This dessert must be made at least 12 hours in advance to allow the gelatin to set properly. Keep refrigerated until ready to serve.
