Instructions

Step 1: Preparation and Mixing

  1. Generously grease a pudding mold or heatproof bowl.
  2. In a large bowl, sift together the 2 cups flour, 1 1/2 cups sugar, 1 tsp baking soda, 1 tsp allspice, 1 tsp nutmeg, 1 tsp cinnamon, 1 tsp cloves, and 1 tsp salt.
  3. Stir in the 1 1/2 cups grated carrots, 1 cup raisins, 1/2 cup candied pineapple, 1/2 cup candied cherries, and 1 cup whole pecans.
  4. Add the 1/2 cup ground kidney suet and 2 cups milk, mixing until the batter is thoroughly combined.

Step 2: Steaming

  1. Spoon the batter into the prepared mold, filling it two-thirds full to allow for expansion.
  2. Cover the mold tightly with a lid or double layer of greased aluminum foil, securing with string.
  3. Place the mold on a rack in a large pot with simmering water reaching halfway up the sides. Steam for 4 hours, checking the water level periodically until the pudding is firm and fragrant.
  4. Carefully remove from the pot, let rest for a few minutes, and unmold. Serve warm with Vanilla Sauce.
