Instructions
Step 1: Prepare the Peel
- Score the 2 medium white grapefruit peels into four lengthwise sections and remove. Scrape away most of the white membrane and cut the peel into 1/4-inch strips.
Step 2: Blanching
- Place 2 cups of peel in a large pan, cover with water, bring to a boil, and cook for 20 minutes; drain.
- Repeat the boiling and draining process two more times with fresh water to remove bitterness, draining thoroughly after the final boil.
Step 3: Candying
- In a medium saucepan, combine 1 1/2 cups granulated sugar, 3/4 cup water, and 1/2 teaspoon salt. Cook and stir until the sugar dissolves.
- Add the drained peel to the syrup, bring to a boil, and simmer for 20 minutes until the peel becomes translucent.
- Gradually add the 1 (3 oz) package lime-flavored gelatin, stirring over low heat until completely dissolved.
Step 4: Finishing
- Remove the peel from the syrup and place on a wire rack to drain and cool for 20 minutes.
- Roll each piece of peel in green sugar crystals if using, and let dry thoroughly on the rack before storing.
