Instructions
Step 1: Prep and Mix Cake
- Preheat your oven to 325°F. Grease and flour a tube or Bundt pan thoroughly.
- In a large bowl, mix the 1/2 cup sugar, 3/4 cup Crisco oil, 1 cup apricot nectar, and 1 package Duncan Hines lemon cake mix together until combined.
- Add the 4 eggs one at a time, beating well after each addition until the batter is smooth and well incorporated.
Step 2: Bake the Cake
- Pour the batter evenly into the prepared tube or Bundt pan.
- Bake for 1 hour, or until a long wooden skewer inserted into the center comes out clean and the top springs back lightly to the touch.
Step 3: Glaze and Cool
- Let the cake cool in the pan for about 10 minutes.
- While the cake is cooling, prepare the icing by whisking together the 1 cup powdered sugar and juice of 1 lemon in a small bowl until completely smooth.
- Pour the icing over the warm cake, allowing it to soak into the surface, and let cool completely in the pan before serving.
💡 Make-Ahead & Storage: Store the cooled cake tightly covered at room temperature for up to 3 days or refrigerate for up to 5 days.
